******* 🎥 THIS VIDEO IS AVAILABLE WITH ENGLISH SUBTITLE 🎥 *******<br /><br />Hello Guys,<br /><br />Welcome to "Perpetual's Kitchen".<br /><br />🥔Aloo Baingan ki Sabzi is a classic North Indian vegetarian dish made with potatoes (aloo) and eggplants (baingan), cooked together in a spiced onion-tomato base. It’s a staple in many Indian households because it is simple, wholesome, and pairs beautifully with roti, paratha, or rice.<br /><br />This dish is versatile—you can prepare it as a dry stir-fry (sukhi sabzi) or as a semi-gravy curry depending on your taste. The earthy flavors of eggplant combine well with the starchy, comforting potatoes, while the masala adds a burst of aroma and taste.😊<br /><br />⬗Here’s a quick recipe:-<br />☛ FOR FRIED POTATO WEDGES:-<br />* Heat ½ cup oil in a kadai (WOK)<br />* Add 1 potato - cut into wedges to the kadai & fry them until they are 50% to 60% cooked.<br />* Take it our in a plate & keep it a aside for further use.<br /><br /> ⬗Method:-<br />* Add 1 tsp Cumin seeds, ¼ tsp Asafoetida & ¼ tsp Carom seeds in the same oil in which we fried the potato wedges. Stir & fry<br />* Now add 1 tsp Ginger-Garlic paste. Stir & fry.<br />* Add 2 finely chopped onions. Fry them until they turn golden brown in colour.<br />* Add 8-10 curry leaves. Stir & fry.<br />* Now ad 1 tsp Kashmiri red chilli powder, 1 tsp Coriander powder, ½ tsp turmeric powder, ½ tsp Onion-Garlic powder & ¼ tsp Black pepper powder. Mix & cook.<br />* Add 2 roughly chopped tomatoes. Stir & cook.<br />* Add salt as per taste & mix well.<br />* Close the lid & let it cook on low flame for 5 minutes.<br />* Open the lid after 5 minutes & mix well.<br />* Now add ½ kg Brinjal (Eggplant) - Washed & cut to the kadai. Mix & cook well.<br />* Close the lid & let it cook on medium flame for 5 minutes.<br />* Open the lid after 5 minutes & mix well.<br />* Add fried potato wedges & mix well.<br />* Close the lid & let it cook on low flame for 10 minutes (NOTE:- Keep stirring Occasionally)<br />* Open the lid after 5 minutes & mix well.<br />* Now add ½ tsp Garam masala, 2 tbsp Crushed groundnuts, 1 tsp Dried fenugreek leaves, 2 tbsp chopped coriander leaves & 1 green chilli -- Slit inn centre.
